Meatless Mondays: Bean Chili

1 cup dried mung beans
1 cup dried urad beans

Soak the mung and urad beans in water for at least 3 hours.  After the beans are 
done soaking, place them in a large pot.  Add the following ingredients to the 
pot:

2 (28 oz each) cans of tomatoes
2 cups lime beans, fresh or frozen
2 cups bell pepper, chunked
2 cups corn, fresh or frozen
2 tsps jalapeno, diced
8 oz collard greens, fresh or frozen
1 onion, chunked
4 cups vegetable stock/broth
1 Tbsp salt
1 Tbsp chili powder
1 Tbsp cumin
1 Tbsp black pepper
1 Tbsp paprika

Bring ingredients to a rolling boil, then turn to a simmer and cook until the 
beans are tender.  Enjoy!!

Meatless Mondays: Greens Curry Soup with Chickpeas

  • 1 Tbs. olive oil
  • 1 tsp. curry powder
  • 1 tsp. ground cinnamon
  • 1 tsp. ground turmeric
  • 1/2 tsp. chili powder
  • 1/4 tsp. ground nutmeg
  • 1 large onion, finely chopped
  • 2 cups chopped mustard greens
  • 1 15-oz. can chickpeas, rinsed and drained
  • 1 medium tomato, chopped
  • 4 cups vegetable broth or water
  • 1 15-oz. can coconut milk
  • 1/4 cup cilantro, finely chopped
  • 8 Tbs. plain Greek yogurt, divided, for garnish


Heat oil in saucepan over medium-high heat. Add curry powder, cinnamon, turmeric, chili powder, nutmeg, and onion, and gently stir. Add mustard greens, and cook, stirring occasionally, for 2 minutes.

Stir in chickpeas, tomato, broth, and coconut milk. Reduce heat to medium-low, and simmer for 1 hour, skimming as necessary. Add cilantro, and garnish each serving with 1 Tbs. yogurt.

**This is one of my family's favorite soups.  Let me know if you give it a try and if it becomes a family favorite of your own.

Meatless Mondays: Quinoa with Asparagus

1 clove garlic, diced
1 small onion, bite-size pieces
1 orange bell pepper, bite-size pieces
2 cups chopped asparagus, bite-size pieces
1/2 cup raisins
1 tsp. cumin
1 tsp. coriander
1/2 tsp. cinnamon
1 tsp. salt
1/2 tsp. pepper
1 cup grape tomatoes
4 cups cooked quinoa
Sauté the first 11 ingredients until the asparagus is a nice bright green. Add the cooked quinoa and mix well.
Enjoy!!

This breakfast is a favorite of mine! Quick and easy - takes only 5-6 minutes.

Bagels and Bananas

Bagel Gone Bananas Recipe


Ingredients:

2 tbsp natural peanut butter*
1 tsp local honey
Pinch of salt
1 whole-wheat bagel, split and toasted
1 small banana, sliced - round




Directions:
1. Mix peanut butter, honey and salt in a small bowel.
2. Divide the spread evenly between bagel halves.
3. Top with banana slices.


Calories: 568
Fat: 20 grams
Carbs: 88 grams
Protein: 16 grams
Fiber: 12 grams

Zumba® Baby!

I am currently 6 months pregnant! I still teach my classes and I LOVE it!! Zumba® Fitness is helping me stay active and healthy during this amazing journey into motherhood. Being active before conception and staying active during the pregnancy is very beneficial for both you and the baby. Healthy mom = healthy baby!

My first miniseries will be about being pregnant and healthy: before, during, and after! I will talk about my pregnancy, nutrition, resistance program, and of course teaching Zumba classes while pregnant. The miniseries will be about 13 weeks long. Look forward to interviews with other Zumba Instructors in the area and fitness experts.

Raspberry Smoothie

Makes 1 serving



Ingredients:
1 cup of raspberries
1 banana
1 scoop Whey Protein
1 tbsp local honey
2 tbsp wheat germ
1 tbsp flaxseed
1 tbsp sunflower butter
1 cup spinach
1 cup kale



Directions:
Place all ingredients in blender and blend to desired consistency.

Calories: 598
Fat: 15 grams
Carbs: 83 grams
Protein: 37 grams
Fiber: 21 grams

Bringing Breakfast Back!

Almond-Honey Power Bar

Makes 8 bars
Time: 1 hour

Ingredients:
1 cup old-fashioned rolled oats
1/4 cup slivered almonds
1/4 cup sunflower seeds
1 tbsp flaxseeds, preferably golden
1 tbsp sesame seeds
1 cup unsweetened whole-grain puffed cereal
1/3 cup currants
1/3 cup chopped dried apricots
1/3 cup chopped golden raisins
1/4 cup creamy almond butter
1/4 cup turbinado sugar
1/3 cup honey
1/2 tsp vanilla extract
1/8 tsp salt

Directions:
1. Preheat oven to 350 F. Coat an 8 inch square pan with cooking spray.
2. Spread oats, almonds, sunflower seeds, flaxseed and sesame seeds on a large, rimmed baking sheet. Bake until the oats are lightly toasted and the nuts are fragrant, shaking the pan halfway through, about 10 minutes. Transfer to a large bowel. Add cereal, currents, apricots and raisins; toss to combine.
3. Combine almond butter, sugar, honey, vanilla and salt in small saucepan. Heat over medium-low, stirring frequently, until the mixture bubbles lightly, 2 to 5 minutes.
4. Immediately pour the almond butter mixture over the dry ingredients and mix with a spoon or spatula until no dry spots remain. Transfer to the prepared pan. Lightly coat your hands with cooking spray and press the mixture down firmly to make an even layer (wait until mixture cools slightly if necessary). Refrigerate until firm, about 30 minutes; cut into 8 bars.

Note: Make ahead and store in an airtight container at room temperature on in a refrigerator for up to 1 week or freeze for up to 1 month; thaw at room temperature. Also, makes a great snack!

What's for Dinner?

Almond-Crusted Salmon With Vegetables


Makes 4 Servings
Preparation Time: 25 minutes
Total Time: 45 minutes


Ingredients:
  • 1/4 cup low-fat mayonnaise
  • 1/4 cup slivered, blanched almonds
  • 2 garlic cloves, minced
  • 1 tsp dried dill
  • 2 tbsp Parmesan Cheese
  • 1/4 tsp salt-free Mrs. Dash Original Blend Seasoning
  • Nonstick cooking spray
  • 1 lb four, (4oz) skinless salmon fillets, 1 inch thick
  • 2 cups green beans, cut into 2 inch lengths
  • 1 cup sliced carrots
  • 1 cup brown rice, cooked without salt or fat
Directions:

Preheat broiler.

1. In a small bowl combine the mayonnaise, almonds, garlic, dill, Parmesan cheese, and salt-free seasoning. Set aside.

2. Spray a broiler pan with nonstick cooking spray. Place the salmon fillets on the pan and broil 5 minutes on one side, 5 to 6 inches from the heat source.

3. Turn fillets over and spread mayonnaise mixture on top of the fillets. broil for 5 to 7 minutes or until salmon flakes easily with a fork.

4 Meanwhile, steam broccoli, green beans, and carrots.

5. Serve salmon with vegetables and hot brown rice.

Makes 4 servings.

Bringing Breakfast Back!

Egg and Salmon Sandwich

Makes 1 serving

Ingredients:
1/2 tps extra-virgin olive oil
1 tbps finely chopped red onion
2 large egg whites, beaten
pinch of salt
1/2 tsp capers, rinsed and chopped (optional)
1 ounce smoked salmon
1 slice tomato
1 whole-wheat English muffin, split and toasted


Directions

1. Heat oil in a small nonstick skillet over medium heat. Add onion and cook, stirring, until it begins to softens, about 1 minute. Add egg whites, salt and capers and cook, stirring consistently, until whites are set, about 30 seconds.
2. To make the sandwich, layer the egg whites, smoked salmon and tomato or English muffin.

Fat: 5 grams
Carbs: 25 grams
Protein: 19 grams
Fiber: 3 grams

Bringing Breakfast Back!
















It's time to bring breakfast back to your life!

Breakfast is important in maintaining a healthy weight and lifestyle. We fast during the night when we sleep. When we eat we "Break" our "Fast". This lets our bodies know that its time to get our metabolism going again. It is important to eat within the first 2 hours of waking up - the sooner the better. By doing so you will give your metabolism a boost and will be burning through calories and fat for longer!

When you do not eat breakfast you use up your energy stores quickly and you'll be tired and rundown by lunch time (relying on energy drinks to get you by). You'll also be more hungry leading to over eating. Your body will be overloaded and not able to breakdown and process the calories leading to storage in fat cells.

If you can't eat right when you wake up try a small breakfast 30-45 minutes after waking and then eat a another breakfast an hour later. Continue to eat small meals and snacks every 2-3 hours thereafter. This will help keep your metabolism up and running throughout the day!
